*Big Event White Bean Salad
Ingredients

3 tablespoons red wine vinegar
-
3 cloves finely chopped garlic

1/3 cup olive oil
-
Salt and pepper to taste

5 cups canned Great Northern beans
-
1/2 cup diced green onions
-
1 cup diced celery
-
1 tablespoon chopped parsley
Preparation

In a small bowl, whisk together red wine vinegar, garlic, olive oil, black pepper, and salt.

In a large bowl, mix beans, green onions, and celery together.

Add red wine vinegar mixture to bean mixture.

Fold chopped parsley into bean mixture.
-
Season with additional salt and pepper if desired.
-
Tip: Rinsing the beans with water decreases the sodium.
