Cool and Crunchy Simple Salad
Ingredients

3 tablespoons vinaigrette dressing or see Vinaigrette Dressing recipe, substituting the balsamic vinegar for sherry vinegar and double the sweetener of choice

3 cups romaine lettuce, cut into bite-size pieces or substitute watercress or arugula

1 1/2 cups English or Persian cucumbers, partially peeled, cut in half lengthwise then thinly sliced

1 1/2 cups pea pods, strings removed and cut into thin slices on the diagonal

4 radishes, thinly sliced
Preparation

Arrange the ingredients onto 4 serving plates. Just before serving, drizzle each salad with 2 teaspoons of the vinaigrette.

Serving Ideas : This goes really well with seafood such as salmon, sable, or barramundi.

NOTES : To partially peel a cucumber, peel leaving strips of the peel between each section peeled. No need to peel a Persian cucumber
