Almond, Date, Dried Cherry Energy Bites
Ingredients

1 cup almonds, walnuts or cashews, toasted

1/8 teaspoon salt

1 1/4 cup Medjool dates, pitted, about 15

1/4 cup dried cherries

1/4 cup rolled oats

1/4 cup coconut flakes, toasted

1 tablespoon almond butter or peanut butter or more as needed

1/2 teaspoon cinnamon

1/2 teaspoon cardamom
Preparation

Process the nuts and salt in a food processor fitted with the S blade until the nuts are coarsely ground.

Add the dates, cherries, oats, coconut, almond butter, cinnamon and cardamom. Keep processing the mixture until it starts to stick together. You may need to add a bit more almond butter to achieve this. When you can squeeze a handful and it sticks together, you're done.

Roll the mixture into 16 balls that are about 1 inch in diameter. Store in an airtight container in the fridge for up to two weeks or a week outside of the fridge.
