Seasoned Sweet Potato Medallions
Ingredients

2 medium sweet potatoes, peeled and cut into medallions, about 4 cups of medallions or 1 1/2 pounds potatoes

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1/2 teaspoon curry powder

1/4 teaspoon salt or as desired

1/4 teaspoon ground black pepper

1 tablespoon extra virgin olive oil
Preparation

Preheat the oven to 425 F. Line a sheet pan with parchment paper.

Measure the seasonings into a large bowl. Toss in the potato medallions, then add the oil. Mix well.

Transfer to the prepared sheet pan and bake in the preheated oven for about 25 - 30 minutes or until potatoes are tender when pierced with the point of a knife. Flip potatoes over and rotate the pan half way through the cooking time.
