
Ingredients
- 8 cups mixed fresh spring greens, your choice
- 1 medium honey crisp apple, or your favorite, core removed and thinly sliced, and tossed with a squeeze of lemon juice
- 1/2 cup dried cranberries or cherries
- 1/2 cup walnuts, toasted
- 2 oz blue cheese, crumbled
- 8 ounces roasted turkey or chicken, without skin or bones, chopped
- THE DRESSING:
- 2 teaspoons dijon mustard
- 1 Tablespoon honey
- 2 Tablespoons apple cider vinegar
- 1 Tablespoon shallot, finely chopped
- 1/4 cup olive oil
- salt and pepper to taste
Preparation
- Place greens in a large bowl. Top with apples, cranberries, walnuts, cheese and chopped turkey or chicken.
- In a small bowl whisk together the honey, dijon mustard, vinegar, shallot and olive oil. Season with salt and pepper as desired. Drizzle the dressing over the salad and toss to coat. Enjoy!
- Feel free to change the ingredients to whatever you have on hand or prefer - halved grapes, or sliced pears instead of sliced apples. Perhaps pecans instead of walnuts. Change up the cheese to cheddar, feta or goat cheese.
