Grilled Zucchini and Yellow Squash*
Ingredients

4 small green zucchini or yellow summer squash

1 teaspoon garlic, minced

1 tablespoon extra virgin olive oil

1/4 teaspoon sea salt

1/4 teaspoon ground pepper
Preparation

Trim the top and bottom from the washed and dried zucchini. Slice zucchini in half around the middle, then each half
into 1/8" inch thick slabs/rectangles. Place the slices into a medium-sized bowl and add garlic, olive oil and seasoning. Toss
with hands to coat the slices with all of the seasonings.

Heat a grill or grill pan to medium high heat. Place the sliced zucchini in a single layer and cook until grill marks appear.
Turn slices over and cook an additional minute or two.

Transfer to serving dish and season with additional salt and pepper as desired.
