Quick Chicken Chili
Ingredients

1 tablespoon olive oil, or your favorite

3 cups diced onions

1 red bell pepper, seeded and diced, about 1 cup

1 poblano pepper, seeded and diced, about 1 cup

1 teaspoon garlic, finely chopped, 1-2 cloves

2 teaspoons ground cumin
-
1 teaspoon ground coriander
-
1/2 teaspoon ground chipotle pepper or more to taste

4 ounces canned, fire-roasted green chiles
-
14 1/2 ounces canned diced tomatoes

28 ounces canned crushed tomatoes

9 ounces canned white beans, drained & rinsed
-
9 ounces canned black beans, drained & rinsed

4 cups cooked rotisserie chicken, bones & skins removed

Salt and ground black pepper, to taste
Preparation

In a soup pot over medium heat, warm oil.

Add onions and cook 10 minutes, until soft, but not brown, stirring often.

Add peppers and garlic. Cook an additional 10 minutes, stirring often.

Add cumin, coriander, and chipotle pepper and cook until fragrant, about 1 minute.

Stir in green chiles, diced and crushed tomatoes and cook an additional 10 minutes.

Add beans, stir, cover, cook 5-10 minutes.

Add chicken, stir, cover and cook 5-10 minutes.

Taste and adjust seasoning as desired with salt, ground pepper and add extra chiles for a spicier version!
