Baked Golden Delicious Apples with Blueberry Sauce

Ingredients

  • 6 small golden delicious apples, washed, cored, and scored
  • 12 ounces frozen apple juice concentrate, thawed or grape juice
  • 1 tablespoon minute tapioca
  • 10 ounces blueberries, fresh or frozen

Preparation

  1. Preheat oven to 375 F
  2. Place apples into a rectangular baking dish large enough for them to fit in one layer without being crowded. Pour the fruit juice around them and add the tapioca between the apples.
  3. Distribute the berries in and around the cored apples.
  4. Bake in the middle of the preheated oven until the apples are tender when pressed, and the flesh of the apples puff out where they were scored.
