Super Easy Sweet Potato
Ingredients

2 medium sweet potatoes, scrubbed

2 teaspoons butter, optional

salt and pepper, to taste
Preparation

Preheat oven to 350F. Line small baking pan with aluminum foil.

Pierce each potato 3-4 times with fork or the tip of a paring knife. Place onto prepared baking pan and bake for about 45 minutes or until puffed and tender to the touch.

Split skin lengthwise and press the two ends towards each other to fluff up the flesh. Dot with butter and season with salt and pepper.
