Lemon Rice

Ingredients

  • 2 cups water
  • 1 cup long-grain white rice
  • 1/2 teaspoon curry powder, such as Madras
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 2 teaspoons low sodium soy sauce

Preparation

  1. In a medium saucepan with lid, bring 2 cups of lightly salted water to a boil. Stir in remaining ingredients. Cover tightly, reduce heat to low and simmer 15 minutes or until all liquid has been absorbed. Fluff with fork and serve.
