Juicy Jerk Chicken Thighs

Ingredients

  • 2 teaspoons ground allspice
  • 2 tablespoons brown sugar
  • 1/2 teaspoon cumin
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 tablespoon avocado oil
  • 2 lbs. boneless skinless chicken thighs

Preparation

  1. Combine all the spices, brown sugar and oil in a large bowl. Preheat a grill pan or outdoor grill to high heat.
  2. Add the chicken to the bowl and rub the spice mixture over the chicken thighs until thoroughly coated(you can prep this a couple of hours ahead of time if needed).
  3. Place the thighs on the hot grill. Cook about 4-5 minutes per side, until the exterior is a very deep, dark brown and the inside in no longer pink(165 degrees). Remove from heat, cover with foil, and let rest 10 minutes. Serve with Grilled Pineapple with Toasted Coconut.
