Spinach Salad with Warm Maple Dressing

Ingredients

  • 1/2 cup pecans
  • 1 crisp apple - your favorite, cored and chopped into bite-size pieces
  • squeeze of lemon juice
  • 1 shallot, peeled and finely chopped
  • 2 Tablespoons olive oil
  • 1 Tablespoon whole grain dijon mustard
  • 2 Tablespoons maple syrup
  • 2 Tablespoons apple cider vinegar - or your favorite vinegar
  • salt and pepper to taste
  • 5 ounces baby spinach- washed and dried
  • 3 Tablespoons dried cranberries
  • 2 ounces goat cheese

Preparation

  1. Warm a small skillet over medium heat. Add nuts and toast. Remove from heat and chop, then set aside. Wipe out skillet. Core and cut the apple then toss with a squeeze of lemon juice and set aside.
  2. In the skillet, warm the olive oil and add the shallots and cook until slightly softened. Stir in the mustard, maple syrup and vinegar. Season with salt and pepper.
  3. Place the spinach in a large bowl. Add the cranberries and the chopped apple. Drizzle the warm dressing over the greens and fruit. Crumble the goat cheese over the top, then sprinkle with the pecans. Toss and serve.
