Ginger Scallion Sauce
Ingredients

1/4 cup fresh ginger, about a 3-inch piece, washed, peeled and finely chopped

1 cup (about 8 whole) scallions (green onions) white and green parts - thinly sliced

1/4 cup avocado oil - or your favorite high smoke point, neutral oil

1 Tablespoon rice wine vinegar - or your favorite vinegar

2 teaspoons reduced sodium tamari or soy sauce

2 teaspoons roasted sesame oil

pinch of salt
Preparation

In a small saucepan, heat oil over medium heat until shimmering. Remove from heat. Add the ginger and the scallions and stir to combine. Stir in the vinegar, tamari and sesame oil. Season with a pinch of salt.
Transfer to serving dish or store in covered container in the refrigerator for up to 2 weeks.

This is great to enjoy with dumplings, rice bowls, ramen noodles or into soup. It's delicious drizzled over grilled or roasted vegetables such as zucchini, cauliflower or sweet potato. Serve with salmon, steak, chicken, tofu or scrambled eggs.
