Buffalo Cauliflower Bites

Ingredients

  • 1 medium head of cauliflower, about 8 cups of florets
  • 2 tablespoons cornstarch
  • 1/2 teaspoon smoked paprika
  • 1/8 teaspoon ground black pepper
  • 2 tablespoons extra-virgin olive oil
  • 1/4 cup hot sauce, such as Frank's
  • 1 tablespoon lemon juice
  • 2 tablespoons unsalted butter
  • For the cheese dip:
  • 1/3 cup sour cream
  • 2 tablespoons crumbled blue cheese
  • 1-2 tablespoons milk
  • 2 teaspoons mayo

Preparation

  1. Preheat oven to 400 degrees. Line a large baking sheet with parchement and place an oven rack in the lower third of the oven.
  2. In a medium mixing bowl, toss the cauliflower florets with the cornstarch, smoked paprika and ground pepper until thoroughly coated. Drizzle the olive oil over the caulflower and distribute evenly until coated. Arrange in a single layer on baking sheet and roast in oven for 20 minutes.
  3. Meanwhile, in a small saucepan, melt the butter. Add the hot sauce and lemon juice and whisk to combine. Set aside.
  4. After 20 minutes, toss the cauliflower florets and return to oven for another 10 minutes.
  5. Once the cauliflower is golden, drizzle the hot sauce mixture over the florets and thoroughly coat. Return the pan to the oven and bake until the cauliflower is blistered in spots, about 10 more minutes.
  6. In a small bowl combine sour cream, crumbled blue cheese, milk and mayo. Refrigerate for 30 minutes.
  7. Serve cauliflower bites with cheese sauce and celery sticks if desired.
