Ingredients
- 1 clove garlic, minced (about 1/2 teaspoon)
- 1 teaspoon Dijon mustard
- pinch of salt, if desired
- 1 teaspoon honey
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground chipotle pepper or your favorite hot sauce, to taste
- 1/2 teaspoon ground cumin
- 1/4 cup fresh lime juice
- 2 Tablespoons extra virgin olive oil
Preparation
- In a small bowl, combine all of the ingredients and whisk to blend well. Adjust seasoning as desired. Cover and store in refrigerator for up to 2 weeks.
- This recipe yields 1/2 cup. It is a great dressing for bean salads and can be used as a marinade for chicken or seafood.
