Zesty Zucchini Saute

Ingredients

  • 2 teaspoons olive oil
  • 1 large shallot, diced
  • 2 medium zucchini, scrubbed and sliced
  • 2 medium yellow squash, scrubbed and sliced
  • 1 teaspoon fresh thyme leaves
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh chives or parsley
  • salt and ground black pepper, to taste

Preparation

  1. In a large skillet, heat the olive oil over medium heat. Saute the shallot until beginning to soften, about 2 minutes.
  2. Turn up the heat to medium high and add the zucchini, summer squash and thyme. Saute until zucchini and summer squash are golden, tossing to cook evenly, about 5-6 minutes.
  3. Add lemon zest and chives, toss well. Season with salt and pepper to taste.
