Wilted Spinach with a Splash of Balsamic Vinaigrette

Ingredients

  • 5 ounces fresh spinach, rinsed
  • pinch sea salt
  • 1 teaspoon olive oil
  • 1 clove garlic, thinly sliced
  • 2 scallions, sliced on the diagonal
  • 1 tablespoon balsamic vinegar
  • sea salt and freshly ground black pepper, to taste

Preparation

  1. In a large saucepan, place spinach, with the water still clinging to the leaves from rinsing it, over medium-high heat. Add a pinch of salt.
  2. When spinach begins to wilt, stir to allow even cooking. When spinach has completely wilted, 2-3 minutes, drain in colander.
  3. Return pan to heat, add olive oil, garlic and scallions. Saute until soft and translucent, about 1 minute. Add balsamic vinegar. Add the spinach back to the pan, toss to coat with seasonings. Adjust seasonings to taste and serve.
