Whole Grain Ginger Scallion Rice
Ingredients

1 tablespoon extra virgin olive oil

1 tablespoon minced ginger

1 red bell pepper, seeded and diced

1 cup brown and wild rice or your favorite whole grain rice

2 cups water

1/2 teaspoon sea salt

1/2 cup thinly sliced green onions

1/2 teaspoon freshly ground black pepper, to taste
Preparation

Warm olive oil in a medium saucepan with a tight fitting lid. Add ginger and stir until fragrant, about 1 minute. Add bell pepper and cook 2 minutes. Stir in rice, water, and salt. Bring to a boil; reduce heat to low, cover and cook according to the time on the rice package directions. This will vary according to the variety of rice used.

Remove from heat when cooked, fluff with fork and stir in green onions and pepper.
