Whole Grain Couscous with Scallions and Mint

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1/4 cup chopped shallot
  • 1/2 teaspoon fresh thyme leaves
  • 2 cups low sodium chicken broth, preferably homemade
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup whole wheat couscous or substitute quinoa or buckwheat for a gluten-free option
  • 1/4 cup pine nuts, lightly toasted
  • 2 tablespoons currants
  • 1/4 cup scallions, chopped
  • 2 tablespoons fresh mint leaves, chopped

Preparation

  1. Warm the olive oil in a medium saucepan. Add shallots and saute until translucent, about 3 minutes. Add thyme leaves and pour in the chicken stock. Bring to a boil, add salt as desired, and pepper. Add couscous, cover and let sit for about 5 minutes.
  2. Remove cover, add pine nuts, currants, scallions, and mint. Fluff with a fork and serve.
