Tropical Fruit Salad

Ingredients

  • 2 cups mandarin orange slices, canned, in it's own juice, drained
  • 2 cups fresh strawberries, quartered
  • 1 cup kiwi, peeled and diced, about 1 cup
  • 2 cups fresh pineapple, peeled and cut into bite-sized chunks
  • 2 mangos, peeled, pitted and cut into bite-sized chunks, about 2 cups
  • 1 medium lemon, zested and juiced
  • 1 large lime, zested and juiced
  • 1/4 cup honey
  • 1/2 teaspoon grated fresh ginger
  • 1/2 teaspoon poppy seeds

Preparation

  1. Wash and dry all fresh fruit. In a large bowl, add the lemon zest and juice, lime zest and juice, honey, grated ginger and poppy seeds. Whisk well.
  2. Add the fruit to the dressing and combine thoroughly. Enjoy!
