Tortellini Skewers with Pesto Drizzle

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons pesto, homemade or from a jar
  • 2 teaspoons red wine vinegar
  • 1 8 oz. package of spinach tortellini, cooked to package directions
  • 1 pint cherry tomatoes
  • 4 oz. tiny fresh mozzarella cubes or balls
  • 1/4 cup fresh parsley, chopped
  • 20 small wooden skewers

Preparation

  1. In a small bowl, combine the olive oil, pesto and red wine vinegar. Set aside.
  2. On the small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube or ball per skewer. Lay the skewers on a platter and lightly drizzle the pesto dressing over them with a spoon. Sprinkle with chopped parsley before serving.
