Tortellini Skewers with Pesto Drizzle
Ingredients

1 tablespoon olive oil

2 tablespoons pesto, homemade or from a jar

2 teaspoons red wine vinegar

1 8 oz. package of spinach tortellini, cooked to package directions

1 pint cherry tomatoes
-
4 oz. tiny fresh mozzarella cubes or balls

1/4 cup fresh parsley, chopped

20 small wooden skewers
Preparation

In a small bowl, combine the olive oil, pesto and red wine vinegar. Set aside.

On the small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube or ball per skewer. Lay the skewers on a platter and lightly drizzle the pesto dressing over them with a spoon. Sprinkle with chopped parsley before serving.
