Sweet Summer Herbed Corn Saute
Ingredients

1 tablespoon extra virgin olive oil

1 large shallot, about 1/4 cup, finely chopped

1 clove garlic, about 1 teaspoon, finely chopped

1 red bell pepper, diced

4 cups corn kernels or 16 ounces frozen

3/4 teaspoon salt or as desired

3/4 teaspoon ground black pepper or to taste

1 teaspoon fresh thyme leaves or 1/2 teaspoon dry

2 tablespoons chives, finely chopped

1/4 cup Italian parsley, chopped

1/4 cup cilantro, chopped

1/4 cup fresh basil leaves, chopped
Preparation

In a large skillet heat olive oil over medium heat. Add shallot and garlic and saute, stirring, until translucent, about
3 minutes. Add red bell pepper and saute an additional 2 minutes. Add corn and continue to cook for about 3
minutes or until it is tender. Season with salt and pepper as desired.

Fold in the herbs, cook an additional minute. Taste and adjust seasonings. Transfer to a bowl and serve.
