Sweet Summer Herbed Corn Saute

Ingredients

  • 1 tablespoon extra virgin olive oil
  • 1 large shallot, about 1/4 cup, finely chopped
  • 1 clove garlic, about 1 teaspoon, finely chopped
  • 1 red bell pepper, diced
  • 4 cups corn kernels or 16 ounces frozen
  • 3/4 teaspoon salt or as desired
  • 3/4 teaspoon ground black pepper or to taste
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dry
  • 2 tablespoons chives, finely chopped
  • 1/4 cup Italian parsley, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh basil leaves, chopped

Preparation

  1. In a large skillet heat olive oil over medium heat. Add shallot and garlic and saute, stirring, until translucent, about 3 minutes. Add red bell pepper and saute an additional 2 minutes. Add corn and continue to cook for about 3 minutes or until it is tender. Season with salt and pepper as desired.
  2. Fold in the herbs, cook an additional minute. Taste and adjust seasonings. Transfer to a bowl and serve.
