Sweet and Spicy Glazed Chicken
Ingredients

2 chicken breast halves without skin

1 tablespoon extra virgin olive oil

salt to taste

3 tablespoons honey

1 tablespoon dijon mustard

1 tablespoon soy sauce

1 tablespoon rice wine vinegar

dash hot sauce, such as Tabasco
Preparation

Preheat the oven to 350 F.

Wash and pat the chicken dry and trim it of any visible fat. Place chicken between two sheets of plastic wrap onto a cutting board, and pound the thick end of the breast to even out its thickness. This allows for more even cooking.

Place chicken into a heavy-duty baking pan with the olive oil, turning to coat with the oil. Season with salt. Bake in preheated oven until almost cooked through, about 15 minutes. Turn chicken over half way through the cooking time.

Meanwhile, line a broiler pan with foil, and preheat the broiler. In a small saucepan, combine the remaining ingredients and bring to a boil, reduce heat and simmer about 3 minutes. When chicken has finished reached an internal temperature 160 F, transfer it to the broiler pan and spread with half of the honey mixture. Broil for about 2 minutes, checking after 1 minute or until sauce is bubbly and chicken is beginning to brown. There is no need to turn the chicken over!

Serve chicken with remaining sauce drizzled on top.
