Super Easy and Savory Lime Grilled Chicken

Ingredients

  • 6 chicken breast halves without skin, trimmed and pounded to an even thickness
  • 4 tablespons lime juice, divided
  • 1 teaspoon lime zest
  • 1 clove garlic
  • 1/4 cup fresh cilantro
  • 1/2 teaspoon salt
  • 3 tablespons pine nuts, lightly roasted
  • 1 tablespoon agave syrup or 1 teaspoon honey
  • 2-4 tablespoons low sodium chicken broth
  • Freshly ground black pepper

Preparation

  1. Combine chicken breasts and 2 tablespoons of lime juice. Set aside.
  2. Combine remaining ingredients into the bowl of a food processor and pulse to blend. Spread half of the mixture, reserve remaining mixture, over the chicken breasts and allow to marinate for half an hour at room temperature.
  3. Cook chicken under a preheated broiler 5-6 minutes per side or until a thermometer inserted into the thickest part of the breast reads 165 F. Thin reserved marinade mixture, as desired, with low sodium chicken broth. Heat, season with pepper and pour over chicken.Serve.
