Sugar Snap Peas with Tarragon Glaze

Ingredients

  • 2 tablespoons water
  • 1/2 teaspoon salt
  • 1 pound sugar snap peas, preferably small ones
  • 1 tablespoon olive oil
  • 2 tablespoons finely sliced shallot
  • 1 teaspoon honey
  • 2 teaspoons fresh tarragon
  • 1 teaspoon lemon zest
  • salt and ground black pepper

Preparation

  1. In a medium size skillet over medium heat, bring the water to a boil with 1/2 teaspoon of salt. Add the peas and cover.
  2. Allow to boil for 2 minutes, then remove cover and allow to boil until water has evaporated, about 30 seconds to 1 minute.
  3. Add olive oil and shallot. Cook 1 minute, stirring. Stir in honey, tarragon, and lemon zest. Taste, add salt and pepper as desired and serve.
