Steamed Green Beans with Tomatoes and Garlic
Ingredients

1/2 pound green beans, fresh

1 teaspoon olive oil

1 clove garlic, chopped

1 roma tomato, diced

salt and pepper, to taste
Preparation

Wash beans, remove stem ends. Steam in steamer basket until just cooked through, about 5 minutes. Refresh under cold water to stop cooking and retain bright green color.

Dry the pan and return it to medium heat. Add olive oil, garlic and chopped tomatoes. Allow to cook 2-3 minutes,
or until tomatoes are heated through. Season with salt and pepper. Add beans, toss well with tomato mixture for
2-3 minutes or until hot.
