
Ingredients
- 2 pounds fresh green beans, cleaned and ends trimmed
- 3 Tablespoons olive oil
- 3 cloves garlic, chopped
- 1 pound tomatoes, seeded and diced
- salt and pepper, to taste
- 1/4 teaspoon red pepper flakes
Preparation
- Wash beans, remove stem ends. Steam in steamer basket until just cooked through, about 5 minutes. Refresh under cold water to stop cooking and retain bright green color.
- Dry the pan and return it to medium heat. Add olive oil, garlic and chopped tomatoes. Allow to cook 2-3 minutes, or until tomatoes are heated through. Season with salt and pepper. Add beans, toss well with tomato mixture for 2-3 minutes or until hot.
