Steamed Green Beans with Lemon Zest and Prosciutto
Ingredients

3 pounds green beans, washed and stem ends removed

1 tablespoon olive oil

2 tablespoons shallots, finely chopped

2 tablespoons lemon zest

3 ounces prosciutto, finely chopped

salt and pepper to taste
Preparation

Steam beans until crisp-tender, 5 - 7 minutes. Rinse under cold water to set bright green color. This step may be done a day or two ahead of time and refrigerated in sealed container. Then proceed with the recipe just before serving.

Empty water from pan and warm the olive oil over medium-high heat. Add shallots and prosciutto and cook about 30 seconds to 1 minute or until the shallots are softened but not browned. Toss in beans and reheat 3-5 minutes.

Season with lemon zest, salt and pepper. Transfer to warm serving dish and serve immediately.
