Steamed Green Beans with Lemon Zest and Prosciutto

Ingredients

  • 3 pounds green beans, washed and stem ends removed
  • 1 tablespoon olive oil
  • 2 tablespoons shallots, finely chopped
  • 2 tablespoons lemon zest
  • 3 ounces prosciutto, finely chopped
  • salt and pepper to taste

Preparation

  1. Steam beans until crisp-tender, 5 - 7 minutes. Rinse under cold water to set bright green color. This step may be done a day or two ahead of time and refrigerated in sealed container. Then proceed with the recipe just before serving.
  2. Empty water from pan and warm the olive oil over medium-high heat. Add shallots and prosciutto and cook about 30 seconds to 1 minute or until the shallots are softened but not browned. Toss in beans and reheat 3-5 minutes.
  3. Season with lemon zest, salt and pepper. Transfer to warm serving dish and serve immediately.
