Steamed Green Beans with Lemon Zest

Ingredients

  • 1 1/2 pounds green beans, washed and stem ends removed, cut in half if very long
  • 1 tablespoon olive oil
  • 2 teaspoons butter
  • 2 tablespoons shallots, finely chopped
  • dash of crushed red pepper flakes
  • 2 teaspoons lemon zest, plus additional as a garnish
  • salt and pepper to taste

Preparation

  1. Place washed and trimmed beans in a steamer basket into a pot with a small amount of water. Cover and steam until crisp-tender, about 5 - 7 minutes. Rinse under cold water to set bright green color. Drain and set aside. Empty water from pan and wipe dry.
  2. Return pan to medium heat and add the olive oil and butter. Add shallots and cook 2-3 minutes or until softened but not browned. Toss in beans and reheat 3-5 minutes. Add crushed red pepper flakes, lemon zest and salt . Transfer to warm serving dish and garnish with additional lemon zest over the top.
