Ingredients
- 1 1/2 pounds green beans, washed and stem ends removed, cut in half if very long
- 1 tablespoon olive oil
- 2 teaspoons butter
- 2 tablespoons shallots, finely chopped
- dash of crushed red pepper flakes
- 2 teaspoons lemon zest, plus additional as a garnish
- salt and pepper to taste
Preparation
- Place washed and trimmed beans in a steamer basket into a pot with a small amount of water. Cover and steam until crisp-tender, about 5 - 7 minutes. Rinse under cold water to set bright green color. Drain and set aside. Empty water from pan and wipe dry.
- Return pan to medium heat and add the olive oil and butter. Add shallots and cook 2-3 minutes or until softened but not browned. Toss in beans and reheat 3-5 minutes. Add crushed red pepper flakes, lemon zest and salt . Transfer to warm serving dish and garnish with additional lemon zest over the top.
