Spicy Roasted Sweet Potatoes
Ingredients

3 medium sweet potatoes,peeled and cut into 1/4-inch-thick fries

1/2 teaspoon salt

1/8 teaspoon cayenne pepper, or to taste

1 teaspoon cornstarch

2 tablespoons grapeseed oil or avocado oil

1 jalapeno chile pepper, seeded and cut into thin julienne or left whole and sliced crosswise, including the seeds for a spicier result!
Preparation

Preheat oven to 425 F. Line a sheet pan with parchment paper.

Transfer potatoes to prepared sheet pan and arrange in a single layer. Bake until fries begin to brown, 10
minutes. Turn fries over and sprinkle with the sliced jalapeno. Return to the oven for an additional 8 - 10 minutes or until golden.

In a large bowl combine the salt, cayenne pepper, cornstarch, and oil. Add the sweet potato fries and toss well.
