Spicy Roasted Red Pepper Spread

Ingredients

  • 2 roasted red bell peppers, peeled, and seeded or roasted peppers from a jar
  • 1 clove fresh garlic or more to taste
  • 1/2 cup sun-dried oil-packed tomatoes
  • 1 tablespoon capers, drained and rinsed
  • 1/4 cup Italian parsley, coarse stems removed and coarsely chopped
  • 1 teaspoon fresh thyme, leaves stripped from stems
  • 1/2 teaspoon crushed red pepper flakes
  • salt and pepper as desired

Preparation

  1. While peppers are cooling, puree the garlic in the bowl of a food processor. With the machine running, add the tomatoes, capers and bell peppers. Puree until smooth. Add the parsley, thyme and crushed pepper flakes and pulse to combine into a paste.
  2. Taste and add salt and pepper if desired.
