Spicy Roasted Red Pepper Spread
Ingredients

2 roasted red bell peppers, peeled, and seeded or roasted peppers from a jar

1 clove fresh garlic or more to taste

1/2 cup sun-dried oil-packed tomatoes

1 tablespoon capers, drained and rinsed

1/4 cup Italian parsley, coarse stems removed and coarsely chopped

1 teaspoon fresh thyme, leaves stripped from stems

1/2 teaspoon crushed red pepper flakes

salt and pepper as desired
Preparation

While peppers are cooling, puree the garlic in the bowl of a food processor. With the machine running, add the tomatoes, capers and bell peppers. Puree until smooth. Add the parsley, thyme and crushed pepper flakes and pulse to combine into a paste.

Taste and add salt and pepper if desired.
