Spicy Lime Dressing

Ingredients

  • 1 clove garlic, minced (about 1/2 teaspoon)
  • 1 teaspoon Dijon mustard
  • pinch of salt, if desired
  • 1 teaspoon honey
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground chipotle pepper or your favorite hot sauce, to taste
  • 1/2 teaspoon ground cumin
  • 1/4 cup fresh lime juice
  • 2 Tablespoons extra virgin olive oil

Preparation

  1. In a small bowl, combine all of the ingredients and whisk to blend well. Adjust seasoning as desired. Cover and store in refrigerator for up to 2 weeks.
  2. This recipe yields 1/2 cup. It is a great dressing for bean salads and can be used as a marinade for chicken or seafood.
