Snap Peas with Radishes and Mint

Ingredients

  • 8 ounces sugar snap peas, trimmed and strings removed
  • 2 teaspoons unsalted butter
  • 1 cup radishes, thinly sliced
  • 1 tablespoon fresh mint, chopped
  • sea salt and freshly ground black pepper, as desired

Preparation

  1. Place one cup of lightly salted water into a medium skillet and bring to a boil. Add snap peas and cook 1 minute. Drain peas and rinse under cold water.
  2. Return dried skillet to medium heat. Add butter to skillet and allow to melt. Add drained snap peas, radishes, and mint. Toss to combine and cook until heated through. Season with sea salt and freshly ground pepper as desired.
