Sliced Cucumber and Radish Salad

Ingredients

  • 3 tablespoons apple cider vinegar or other light vinegar, such as rice vinegar
  • 2 teaspoons dark sesame oil
  • 1 teaspoon honey
  • 1 cucumber
  • 4 radishes
  • salt and ground black pepper, to taste
  • 1/2 cup cilantro leaves

Preparation

  1. In a medium bowl stir together the vinegar, sesame oil and honey.
  2. Partially peel the cucumber lengthwise leaving a strip of the skin between each peeled section. Cut off one end of the cucumber then thinly slice the cucumber either with a knife or a mandoline-type slicing tool. This can be done right into the bowl if using the mandoline-type paddle slicer!
  3. Thinly slice the radishes using the same method. Add to the bowl.
  4. Toss all of the ingredients together and allow to sit for 10 minutes to give the flavors a chance to combine.
  5. Season with salt and pepper to taste. Transfer to serving dish and garnish with cilantro leaves.
