Simply Delicious Roasted Delicata Squash

Ingredients

  • 1 delicata squash, washed and cut lengthwise, seeds removed and cut into 1-inch slices
  • 1 tablespoon avocado oil or olive oil
  • 2 teaspoons lemon pepper

Preparation

  1. Preheat the oven to 400 F
  2. Measure the oil into an oven-proof baking dish and warm it on the stove top. Add the squash to the pan in one layer and cook on the stove top for about 5 minutes. Sprinkle liberally with lemon pepper or your choice of seasoning. Transfer the squash to the oven and roast for about 20 minutes, turning once or until it feels tender when pierced with the point of a paring knife. Serve hot!
