Simple Slaw with Sunny Honey-Mustard Dressing

Ingredients

  • Sunny Honey-Mustard Dressing:
  • 1/4 cup plain Greek yogurt - or your favorite dairy free alternative
  • 2 Tablespoons extra virgin olive oil
  • 2 Tablespoons Dijon Mustard
  • 2 Tablespoons honey
  • 1 teaspoon lemon zest
  • 2 Tablespoons lemon juice
  • 1 clove garlic, finely chopped (about 1/2 teaspoon)
  • pinch of salt (optional)
  • freshly ground black pepper, as desired
  • The Simple Slaw:
  • 1/2 green cabbage, cored and shredded (or 1/4 red cabbage and 1/4 green cabbage) - about 8 cups
  • 1/2 red bell pepper, seeded and thinly sliced
  • 1/2 yellow bell pepper, seeded and thinly sliced
  • 1 cup carrots-shredded or grated

Preparation

  1. In a small bowl, stir or whisk together the ingredients for the dressing.
  2. In a large bowl, combine and toss all of the veggies. Add the dressing and toss well again to coat the veggies. allow to sit for about 10 minutes or so, then toss again as the veggies will start to soften a bit. Cover and refrigerate until ready to serve - this will hold well for up to 5 days. . Toss again before serving and adjust seasoning as desired.
  3. This is a wonderful start for a simple slaw but feel free to add other veggies, herbs or spices according to your favorite flavors. This makes a great addition and adds extra crunch to sandwiches.
