Simple Salad of Legumes and Herbs*

Ingredients

  • 1 1/2 cups dried green lentils
  • 1/2 cup chopped shallot
  • 1/4 cup Italian parsley, finely chopped
  • 2 tablespoons fresh dill, finely chopped
  • 2 tablespoons fresh mint, finely chopped
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 teaspoons lemon zest
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • Meets Cardiac Rehab guidelines.

Preparation

  1. Sort through lentils, remove any foreign matter and rinse in a strainer. Place lentils into a large saucepan and cover with six cups of lightly salted cold water. Bring to a boil, reduce heat and simmer until tender, about 25 - 30 minutes. Drain well.
  2. In a large bowl stir together remaining ingredients, add lentils and toss well.
