Simple Salad of Legumes and Herbs*
Ingredients

1 1/2 cups dried green lentils

1/2 cup chopped shallot

1/4 cup Italian parsley, finely chopped

2 tablespoons fresh dill, finely chopped

2 tablespoons fresh mint, finely chopped

1 teaspoon cumin
-
1/2 teaspoon salt
-
1/4 teaspoon black pepper

2 teaspoons lemon zest
-
1/4 cup lemon juice

1/4 cup olive oil

Preparation

Sort through lentils, remove any foreign matter and rinse in a strainer. Place lentils into a large saucepan and cover with six cups of lightly salted cold water. Bring to a boil, reduce heat and simmer until tender, about 25 - 30
minutes. Drain well.

In a large bowl stir together remaining ingredients, add lentils and toss well.
