Seasoned Sweet Potato Medallions

Ingredients

  • 2 medium sweet potatoes, peeled and cut into medallions, about 4 cups of medallions or 1 1/2 pounds potatoes
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon salt or as desired
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon extra virgin olive oil

Preparation

  1. Preheat the oven to 425 F. Line a sheet pan with parchment paper.
  2. Measure the seasonings into a large bowl. Toss in the potato medallions, then add the oil. Mix well.
  3. Transfer to the prepared sheet pan and bake in the preheated oven for about 25 - 30 minutes or until potatoes are tender when pierced with the point of a knife. Flip potatoes over and rotate the pan half way through the cooking time.
