Pumpkin Almond Butter Bars
Ingredients

1/2 cup pumpkin puree

1/2 cup almond butter or your favorite nut butter

1 egg

1 teaspoon vanilla

1/4 cup maple syrup

1/2 teaspoon baking soda

1 teaspoon cinnamon

1/8 teaspoon ginger

1/8 teaspoon nutmeg

pinch of cloves

pinch of salt

1/2 cup unsweetened coconut flakes, divided

3 ounces dark chocolate bar (at least 70% cocoa), coarsely chopped

1/4 cup dried plums, finely chopped
Preparation

Preheat oven to 350 degrees. Line a 8" X 8 " baking pan with parchment paper.

In a medium bowl, whisk together all ingredients except coconut, dark chocolate and dried plums. Once ingredients are well combined, fold in 1/4 cup of coconut, the dark chocolate and dried plums.

Pour into prepared pan and sprinkle the rest of the coconut on top. Bake for 20-25 minutes or until slightly golden brown on the edges. Cool pan on wire rack. Cut into 16 squares.
