Pumpkin Almond Butter Bars

Ingredients

  • 1/2 cup pumpkin puree
  • 1/2 cup almond butter or your favorite nut butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1/4 cup maple syrup
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/8 teaspoon ginger
  • 1/8 teaspoon nutmeg
  • pinch of cloves
  • pinch of salt
  • 1/2 cup unsweetened coconut flakes, divided
  • 3 ounces dark chocolate bar (at least 70% cocoa), coarsely chopped
  • 1/4 cup dried plums, finely chopped

Preparation

  1. Preheat oven to 350 degrees. Line a 8" X 8 " baking pan with parchment paper.
  2. In a medium bowl, whisk together all ingredients except coconut, dark chocolate and dried plums. Once ingredients are well combined, fold in 1/4 cup of coconut, the dark chocolate and dried plums.
  3. Pour into prepared pan and sprinkle the rest of the coconut on top. Bake for 20-25 minutes or until slightly golden brown on the edges. Cool pan on wire rack. Cut into 16 squares.
