Prosciutto-Wrapped Asparagus

Ingredients

  • 16 asparagus spears
  • 2 teaspoons extra virgin olive oil
  • 1/2 teaspoon lemon zest
  • 2 Tablespoons finely grated Parmesan cheese
  • freshly ground black pepper, as desired
  • 2 ounces prosciutto, very thinly sliced, excess fat removed

Preparation

  1. Preheat oven to 425 F. Line a small baking sheet with parchment paper.
  2. Wash asparagus spears, pat dry and trim to about 5-inch lengths. Place asparagus in a shallow bowl or onto a plate and drizzle with olive oil. Toss to coat. Sprinkle with lemon zest, pepper and Parmesan cheese. Toss to coat again.
  3. Place larger slices of prosciutto onto cutting board and cut each piece of prosciutto in half lengthwise to end up with two long pieces. Place an asparagus spear onto the end of each prosciutto slice and firmly roll around the spear with the tip peeking out of the top. Transfer the wrapped spears to the prepared baking sheet in a single layer, leaving some space between each piece.
  4. Bake for about 10-12 minutes or until asparagus is tender and prosciutto is crisp. Transfer to serving platter and enjoy!
  5. These can be prepped ahead of time and popped into the oven to baked when ready to serve.
