Pork Potstickers with Sesame-Ginger Dipping Sauce

Ingredients

  • 1/2 pound ground pork
  • 1 teaspoon cornstarch
  • 1 tablespoon dry sherry or shaoxing wine
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon minced garlic
  • 1 teaspoon dark sesame oil
  • 1/2 cup scallions, finely chopped
  • 24 wonton wrappers
  • 1 tablespoon grapeseed oil
  • 1/3 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 teaspoon minced fresh ginger
  • 1 teaspoon dark sesame oil
  • 1 tablespoon scallions, finely chopped
  • 1 teaspoon chili paste
  • 2 teaspoons sugar or agave syrup

Preparation

  1. Cut pork into 1/2-inch medallionsIn a medium bowl and season with sea salt and freshly ground black pepper. Combine pork, and the next seven ingredients. Mix well with your hands to thoroughly combine ingredients. Set aside. Wash your hands.
  2. In a separate small bowl, combine remaining ingredients for dipping sauce.
  3. Place wonton wrappers side by side on a clean dry cutting board or counter top. Scoop 1 scant tablespoon of pork mixture into the center of each wonton wrapper. Dampen the outer edges of the wrappers with water. Fold wrapper over pork mixture to form a triangle, pressing edges together to form a tight seal. Transfer to clean plate and set aside. Cover with lightly dampened paper towel and plastic wrap, if making in advance.
  4. Heat oil in a large skillet over medium-high heat. Place half of the potstickers into the pan in a single layer. Cook until lightly browned, for about 1 - 2 minutes. Flip them over and cook an additional minute or until lightly golden. Transfer cooked potstickers to a plate and continue to cook remaining pot stickers in the same manner. When all are cooked, transfer back to the skillet, pour in 1/2 a cup of water. Cover and steam for 5 minutes or until tender, gently shaking pan to prevent them from sticking. Transfer to serving dish and serve with dipping sauce!
