Pickled Red Onions

Ingredients

  • 1 medium red onion, sliced thin julienne
  • hot water
  • 1/4 teaspoon cumin seeds, roasted and ground
  • 1/2 teaspoon dried oregano
  • 1 teaspoon whole black peppercorns
  • pinch salt
  • 2 cloves garlic, minced
  • 1/2 cup white wine vinegar
  • 1/4 cup frozen orange juice concentrate

Preparation

  1. Place the sliced onion into a medium bowl. Cover with boiling water to 2-inches above the onions and let stand for 15 minutes (this reduces the harshness of the onions).
  2. Meanwhile, in a medium to large glass storage container, combine the remaining ingredients.
  3. When onions have finished soaking, drain them and add them to the other ingredients in the storage jar. Cover and refrigerate until ready to serve (at least 24 hours after they are prepared).
  4. The onions keep refrigerated in their brine for a couple of weeks. Serve the onions drained of their brine!
