Peach Chutney
Ingredients

2 teaspoons avocado oil or olive oil

1 cup diced onion

1 tablespoon garlic, finely chopped

1 tablespoon fresh ginger, peeled and finely chopped

1/2 cup red bell pepper, seeded and diced

1 small jalapeno, seeded and diced

1/4 cup honey

2 tablespoons apple cider vinegar

2 cups peaches, peeled, pitted and diced, frozen work well if not in season
Preparation

Warm oil in medium saucepan over medium low heat. Add onion, garlic and ginger and cook until soft but not brown, about 5-7 minutes. Add bell pepper and jalapeno and cook an additional 3 - 5 minutes. Stir in honey, vinegar, and peaches and simmer 10 - 15 minutes. Taste and adjust seasoning to your preference.

Transfer to serving dish and chill in refrigerator until ready to use.
