Oven Roasted Sweet Potatoes

Ingredients

  • 2 large sweet potatoes (4 cups) peeled and cut into 1/4-inch slices (cut large pieces in half again)
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 tablespoon extra virgin olive oil

Preparation

  1. Line a sheet pan with parchment paper, and preheat the oven to 400 F.
  2. In a medium bowl, measure the curry powder, cinnamon. allspice, salt, and pepper. Add the potato slices and toss to cover with the spices. Add the olive oil and toss again until the potato slices are evenly covered with the seasonings and oil.
  3. Transfer potato slices to the prepared sheet pan. Arrange in one layer and roast in the preheated oven for about 30 minutes, rotate the pan and flip the potato slices over half way through the cooking time. When cooked, the potatoes should be lightly browned and soft to the touch.
