Ingredients
- 2 1/4 cups gluten free rolled oats
- 8 oz. non dairy yogurt(almond or coconut milk) or can use regular greek yogurt
- 4 oz. almond milk
- 2-3 oz. fresh orange juice
- 2 tab. maple syrup
- 1/2 tsp. vanilla extract
- Chopped banana, sliced almonds and orange slices for garnish
Preparation
- In a large bowl, mix yogurt, almond milk, orange juice, maple syrup and vanilla extract until combined. Pour in oats and completely coat with liquid. Cover and refrigerate overnight or at least 3 hours. The oats will absorb all of the liquid. To serve: Scoop out serving size in a small bowl and add a couple tablespoons of almond milk. Stir. Heat in microwave for 1 minute or until warmed through. Optional: Top with chopped bananas, sliced almonds and orange slices.
