Mini Veggie Frittatas

Ingredients

  • 12 eggs
  • 1 cup broccoli, finely chopped
  • 1/2 cup grated carrot (~1 large carrot)
  • 1 red bell pepper, diced
  • 1 tbsp olive oil
  • Spray oil
  • 1 cup cheddar cheese, shredded
  • 1/2 cup 1% milk
  • 1-2 tsp garlic powder
  • 1 tbsp dried basil
  • 1 tbsp dried parsley
  • Salt, to taste
  • Black Papper, to taste

Preparation

  1. Preheat the oven to350 degrees
  2. Heat the oil in a medium frying pan over medium heat. Add the broccoli, carrot, and bell pepper to the pan.
  3. Cook 3-5 minutes until the vegetables become tender, stirring occasionally.
  4. In a large bowl, whisk together the eggs, milk, and spices. Add the cheese and cooked vegetables to the egg mixture and stir to combine.
  5. Spray two 12-well muffin tins with oil.
  6. Carefully pour the egg mixture into each well. Fill muffin well ~3/4 full. This recipe should make approximately 18 mini frittatas.
  7. Bake in the oven for 15-18 minutes until knife inserted comes out clean. Let them cool for 2 minutes before serving.
