Mini Frozen Yogurt Sandwiches
Ingredients

24 small cookies - like Simple Mills Crunchy Almond Flour Chocolate Chip

12 large Tablespoons Yasso frozen Greek Yogurt like mint chip
Preparation

Place a muffin tin in the freezer to chill. Remove when nice and cold then put 1 cookie into each section of the muffin cup with the flat side up (top down).
Scoop 1 Tablespoon of slightly softened frozen yogurt onto each cookie, dip spoon into a glass of warm water and wipe with a paper towel between scoops for cleaner and easier release of the yogurt. Place the other cookie over the each (top up) and press lightly. Place muffin tin back into freezer until very firm.
