Mini Antipasto Skewers

Ingredients

  • 18 cherry or grape tomatoes
  • 18 basil leaves
  • 18 snack size mozzarella balls (6 ounces)
  • 6 ounces marinated artichoke heart quarters cut into 18 bite-size pieces
  • 1/2 yellow bell pepper cut into 18 bite-size pieces
  • 18 pimento stuffed green olives

Preparation

  1. Place all of your ingredients on a tray to create an assembly line. Using a small skewer, thread a cherry tomato, a folded piece of basil, a mozzarella ball, a piece of marinated artichoke heart, a piece of yellow bell pepper and finally an olive. Place on a serving platter and cover and refrigerate until ready to serve. Tastes great served with a drizzle of balsamic vinegar that has been reduced to a glaze.
  2. Feel free to be creative and use a variety of your favorite veggies or cheeses. A little piece of smoked turkey, ham or salami is also quite delicious if desired.
