Middle Eastern Layered Dip

Ingredients

  • 10 oz. of homemade or store bought hummus
  • 1/2 cup cucumbers, finely chopped
  • 1/2 cup tomatoes, seeded and finely chopped
  • 1/4 cup scallions, white and green parts, thinly sliced
  • 1/2 cup kalamata or green olives or a mix of both, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon zaatar seasoning
  • Pita chips to serve

Preparation

  1. Spread hummus in a thin layer in a glass storage container or a large plate or serving platter.
  2. Sprinkle hummus with zaatar seasoning, cucumbers, tomatoes, scallions, olives, feta and parsley. Drizzle the tablespoon of lemon juice over the top before serving with pita chips.
