MHealthy Cool as a Cucumber Iced Herbal Tea Mocktail

Ingredients

  • 1 cup Peach Ginger Herbal tea or feel free to choose your favorite fruity tea, such as Celestial Seasonings fruity teas
  • 1 teaspoon honey, optional if you like it a little sweet
  • 8 ounces water
  • 1 medium cucumber, preferably English, remove green outer peel and discard it, then using a vegetable peeler, peel 2, 6-8-inch continuous lengths of cucumber, as seen in the photo, to wrap around the inside of the glasses
  • 1 small cucumber, preferably English, sliced, to float on top
  • 1 large ice cube, it will take longer to dissolve so it won't dilute your drink as much as smaller ice cubes

Preparation

  1. Steep the tea bag and optional honey in the boiling water for a few minutes to extract maximum flavor. Allow to cool.
  2. Line two wide mouth beverage glasses with the cucumber strips. Add a large ice cube to each glass or fill half full with regular ice cubes. Pour in the cooled herbal tea. Top with the remaining cucumber slices to float on top and enjoy!

  4. NOTES : Many kitchen stores sell large ice cube moulds, otherwise just use regular ice cubes
