Mediterranean Lentil Soup

Ingredients

  • 1 tsp olive oil
  • 1 medium onion, diced (or 1/2 large onion)
  • 2 garlic cloves, minced
  • 2 Italian turkey sausage, sliced
  • 32 oz. low sodium chicken broth
  • 1 can no-salt added, diced tomatoes
  • 3 cups water
  • 1 cup dried lentils
  • 1/2 tsp black pepper
  • 1/4 tsp dried oregano
  • 1 bay leaf

Preparation

  1. Heat oil in large soup pot over medium-high heat.
  2. Add the onion and sauté for 3 minutes or until clear.
  3. Add the garlic and sauté for 30 seconds.
  4. Add the Italian turkey sausage and cook for about 8 minutes until brown.
  5. Add the remaining ingredients.
  6. Bring the soup to a boil. Reduce the heat and cover to simmer for 15 minutes.
