Mediterranean Lentil Soup
Ingredients

1 tsp olive oil

1 medium onion, diced (or 1/2 large onion)

2 garlic cloves, minced

2 Italian turkey sausage, sliced

32 oz. low sodium chicken broth

1 can no-salt added, diced tomatoes
-
3 cups water
-
1 cup dried lentils
-
1/2 tsp black pepper
-
1/4 tsp dried oregano
-
1 bay leaf
Preparation

Heat oil in large soup pot over medium-high heat.

Add the onion and sauté for 3 minutes or until clear.

Add the garlic and sauté for 30 seconds.

Add the Italian turkey sausage and cook for about 8 minutes until brown.

Add the remaining ingredients.

Bring the soup to a boil. Reduce the heat and cover to simmer for 15 minutes.
